Here We Go

I am finally taking the plunge into the world of blogging, ahh ! I must admit it’s a little scary. My husband has been telling me for a while I should start one. My response to him has always been, Who would read it? But,when we sold our house back in May and bought 11 acres in the country my husband and a friend encouraged me to start one about our experiences in the building process and life in the country. So, here goes…

Right now we are living in a 1,350 sq.foot apartment with five kids and let me tell you ,it’s getting old fast. We are hoping to be in our house by Christmas, so fingers crossed !






One of my favorite fall family traditions is going to the orchard to pick apples. On Saturday we loaded all of the kids up and headed to NC for the day to pick apples with hundreds of other people. It was PACKED out. Thankfully the kids didn’t seem to mind and we had a good time!












This weeks recipe is from Publix Aprons and has quickly become a favorite at our house. It’s so good you’ll want to make more so you can have it again the next day!


Brie-Cranberry Turkey Burgers and Crunchy Pea Salad

4 slices of turkey bacon,cooked

1 cup of baby arugula leaves

1 Granny Smith apple,thinly sliced

4 hamburger buns

4 oz. Brie cheese,thinly sliced

8 teaspoons cranberry relish

4 turkey burger patties

1. Preheat grill (or grill pan). Core apple and cut into slices; slice cheese. Cook Bacon.

2. Grill burgers. Melt cheese on burgers during last minute of cook time.

3. Spread mayo on each bun. Place burger on top; top with bacon, apple slices, 1/4 cup arugula, 2 teaspoons cranberry relish, and other half of bun.

Crunchy Pea Salad

1 (15oz.) package frozen green peas

1 cup dry-roasted,salted peanuts

1 cup dried sweetened cranberries

1/2 cup of cooked bacon pieces

1/3 cup Vidalia onion salad dressing

1/4 cup chopped onions

1/4 teaspoon kosher salt

1/4 teaspoon pepper

1. Microwave peas on high for 2 minutes or until thawed.

2.Combine remaning ingredients in salad bowl. Add peas; toss to coat. Chill until ready to serve. (Makes 6 servings)
