Happy Sunday, I hope everyone had a good week ! My girls had fall break Thursday and Friday so it was a short week for us. Jeremy took off work Friday so we could get some things done with the house, picking out fireplaces, countertops, and cabinets. We also started framing this week,YAY !! I’m seriously so excited to see walls going up and be able to walk through and know where actual rooms are.
On Friday Lincoln turned 10 months old. Since he is the last it’s really making me sad knowing he will be one in just two short months. Time needs to slow down !
Towards the end of the week we went to our towns pumpkin patch. We’ve been going to the same one for the last six years and my kids look forward to this every year.
We always make a night of it. We go to the pumpkin patch and let the kids each pick out a small pumpkin to decorate and then a large one to carve. Side note, you may notice in the picture of Bella Grace something on her nose. She and Chance were playing together on Thursday and apparently she was pretending to be a ghost and had her face near the lamp. Chance decided to jump off the bed and fell into her causing her to touch the lightbulb with her nose and burning it. Of course now her sisters have been teasing her by singing Rudolf the Red Nose Reindeer, haha. It’s never a dull moment with those four, lol. Anyway, back to our pumpkin patch night. We then go to a favorite restaurant, come back home and watch a kid friendly scary movie while we eat a yummy snack that I have made. This year I made caramel peanut butter popcorn with chocolate drizzle. I found this recipe from the Food Network and the kids ate it so quickly Jeremy and I barely got any, lol.
Caramel Peanut Butter Popcorn with Chocolate Drizzle
20 cups popcorn
1 1/4 cup peanuts
1/2 cup corn syrup
3/4 cup sugar
1 cup peanut butter
1/4 cup honey
1 teaspoon vanilla extract
8 ounces semisweet chocolate chips
Spread out the popcorn and 1 cup of the peanuts out on two baking sheets. In a saucepan, combine the corn syrup and sugar. Bring to a boil and cook for 2 minutes; remove from heat. Carefully, add the peanut butter and honey. Stir until the peanut butter is melted, then add the vanilla. Working quickly, pour the mixture over the popcorn and peanuts, and use two rubber spatulas to evenly coat the popcorn. Set aside to cool completely.
Fill a saucepot halfway up with water; set over medium heat and bring to a simmer. Turn the heat down to medium-low. Add the chocolate to a glass bowl and place the bowl over the pot of simmering water. Melt the chocolate, stirring occasionally.
Using a spoon or spatula, drizzle the popcorn with the chocolate. Sprinkle the remaining 1/4 cup peanuts over the chocolate.
